Salad with Grated Coconut Dressing - Indonesian Urap

Salad with Grated Coconut Dressing - Indonesian Urap Salad recipe :

Assembling time : 5 minutes
Ingredients :
• 250 gram grated coconut
Grind the following into spice paste
• 8 red cayenne chilies
• 4 cloves garlic
• 8 kaffir lime leaves
• 1 inch kaempferia galanga or 2 inch turmeric
• 50 gram palm sugar
• 2 teaspoon salt
Suggested blanched vegetables
• cabbage - julienne cut
• spinach - pick, young stems and leaves
• morning glory/water spinach - pick, young stems and leaves
• Carrot - julienne cut
• Long beans - cut into 1-2 inch
• bean sprouts
Method :
- Dry and fry the Grated coconut in a skillet over low heat, stirring constantly for 4 to 5 minutes until the coconut turns golden brown.
- Stir in spice paste and continue to fry for a further 3 minutes, stir in the lime leaves and salt, than remove from the heat and set aside to cool.
- Toss together blanched vegetables and shallots with the cooled coconut mixture in a large bowl.
Serve Asian Salad with Grated Coconut
Dressing - Indonesian Urap at once with steamed rice, more delicious with fried tempeh and tofu.
