Recipe for asparagus sown salmon with zucchini

Ingredients :

fresh parsley greens
fresh garlic
Juice of half a lemon
sea ​​salt
black pepper

2 slices of salmon fillet (approx. 250 g)
butter
seed mixture
To the garnish
250 g of green asparagus
1 small, shaped zucchini
10 grains of small new potatoes
For the sauce
250 ml cooking cream
40 g natural cheese cream
1 bunch of fresh chives
1 bunch of fresh parsley greens
1 fresh lemon peel and half the juice
white pepper
nutmeg

Method :

We start the preparations by marinating the salmon! Rub both sides of the fish with sea salt, black pepper, fresh parsley and garlic. (Cut the latter two into small pieces and leave on the salmon as well). Then add half the lemon juice to it. Leave this way or in a thin layer of oil for a few hours at max. Refrigerate for 1 day.

Cook the new potatoes without boiling them until completely soft ("fork test"), then, if necessary, peel them and turn them in parsley butter. As long as the potatoes are main, we can prepare the sauce and garnish.

The sauce ingredients are mixed, heated, set aside, the asparagus, after being stripped of their woody ends, is simmered until soft in salted and lemon water, taking care not to boil them (max. 6-8 minutes)! With the exception of the cooking water, place them in a bowl full of cold water at once, and place the zucchini cut in half in the cooking water and cook until soft! 

Place the asparagus from the cold water for a short time on a kitchen towel or paper towel until served. Scrape the inside of the pre-cooked zucchini halves enough to form the little ladies for the potatoes. 

Finally, let us fry the salmon in a pan, in parsley butter, touching all sides, sprinkling with seeds!
Serving: place the asparagus on one half of the plate, sprinkle the other half with grated lemon zest. Place the finished salmon on the asparagus and the potatoes planted in the zucchini on the lemon zest.
